Our olive oil is an Extra Virgin superior quality oil made exclusively from olives picked within the d.o.c area surrounding Montisi. The oil is made with olives that have been hand picked and cold pressed using only mechanical means.

Our olive trees are all found on the hills surrounding the town of Montisi in the province of Siena. In this area which lies between the Val D’Orcia and the Crete Senese at around 400mt above sea level the yield per hectare is very low which favors a higher quality oil recognized even by the Tuscans, notoriously critical about their oil, as an excellent product. As is tradition in this territory, our oil is a blend of olives harvested from Correggiolo, Leccino and Moraiolo trees. A gift which comes every fall. The olives we use come from trees planted by many generations of contadini, some of which are hundreds of years old and are all kept following traditional methods and therefore without the use of chemicals. We harvest our olives between October and November and take them to our historic town press on a daily basis to ensure maintaining the quality of the fruit. The olives are pressed at a temperature between 23 and 25 degrees celcius, without added water.

The technical characteristics of our oil are excellent with very low acidity, a green to a yellowish green color, it is aromatic with hints of wild grasses, fruity with delicate spice and a slight artichoke flavor.
